I always enjoy the crawfish etouffee. I tried to make it home, but it never comes out right. What's the secret about your roux?

The thing that I love at this place, besides the low key atmosphere and the excellent food, is the fact that every time I go, they treat them like a local, whether it is their first time there or their 27th. the owners are charming and even if it is packed, the mood is like a warm hug by a dear friend. this hidden gem is one of the best.
