There were hardly any guests, because their license to serve alcohol had expired. It did change the ambiance though. We started with the onion rings. They were massive and crumbled all over the table. We asked the waiter if he could clean the table, which he flat out declined. We were shocked and ended up turning the table cloth over before the appetizers arrived. The Caprese salad was marginal, because the tomatoes had no flavor. One person ordered the Scottish Salmon, which was dry and drenched with balsamic glaze and the polenta croutons were spoiled. We came for the steaks and when they arrived they were not cooked the right way. One person requested medium rare and it came as medium. My steak was requested as medium and came as medium well. We did not return them to the kitchen, because we wanted to eat all together. For dessert we ordered coffee ice cream. We received vanilla ice cream with caramel swirls loaded with shards of ice. We decided to write this review, because too many things went wrong and for the waiter to decline to clean the crumbs was beyond the pale. We will not go back again.
My disabled roommate and I had a terrible expereience here. A server asked if we'd share our four person table with two new arrivals unlike them, we'd arrived on time to ensure there was space for us and I told the server my roommate can't eat with people watching him. The server then allowed a very rude woman to approach us asking the same question the server had just asked. It made my roommate so uncomfortable that we had to leave. I emailed the steakhouse requesting a refund, and no one has bothered to get back to me after a couple of weeks. If you're disabled, don't expect this place to understand your needs at all, nor to take responsibility for not understanding them.
I had heard great things about Rio Chama, and chose it as a place to celebrate and thank a special team member from my company. It was very surprising and disappointing to see a paper sign thumb tacked on the door as we entered, We are unable to serve any alcohol Management. This was not a good sign, as it meant someone had either broken some law or they had failed to renew their liquor license, or some other problem. In any case, it was too late to go elsewhere with our party but the dinner overall was honestly just mediocre. Oddly enough, they still gave us a full printed menu of drinks and cocktails, all which we were unable to order. Food: The $25 wild boar bacon appetizer was very disappointing, dry and overcooked, with bison sausage that looked like a hot dog cut with a butter knife. The steaks were fine and the sauces acceptable. The salads were oddly the best part of the whole disappointing meal at a steakhouse. I wanted to love it, and entered very optimistically but for the price, and given the circumstances, I would not recommend Rio Chama and I will not be back again. My suggestion is to do a serious overhaul of the operations and re focus on the basics.

My ribeye was nice. Med-Rare as requested and the Chimichuri was a great topping. Girlfriends Prime Rib wasn't so great according to her. The ownership group botched their liquor license renewals and our most likely being shaken down by NM govt to Payoff. So no wine with a nice steak was a big let down. Server was quite good.
