Carlos met us in the parking lot to greet and welcome us to his restaurant. He then walked us to our table, asked each person their name, and relayed that to our server, Stephanie, who called us by our name throughout the night. The restaurant's ambiance was elegant and intimate, perfect for a romantic dinner or a special celebration. Carlos was more than willing to accommodate my husband's allergy to tree nuts and explained that all dishes on the menu are made to order so that any ingredient could be omitted. The menu was extensive, with options to suit any palate. We tried various menu selections, including Escargot, Calamari, Lobster Bisque, Wedge Salad, Paella, Lamb Chops, Veal Scallopini Marsala, Fruit de Mer, and Bison. Every dish we tried was phenomenal, but our table fan favorite was the Lamb Chops. The attention to detail, personalized service, and classy atmosphere made our dining experience exceptional. We will be back the next time we visit Colorado Springs. Thank you to Carlos and Stephanie for making our experience incredible.
Service was impeccable, I was recognized by name as soon as I walked in the door. The food was beautiful and delicious. I had the frog legs, filet mignon, and a delicious house made mousse that was rich and went well with my old fashion. This is a perfect restaurant for a romantic experience, or even a solo date. Definitely recommend.
Carlos Bistro truly exceeded my expectations in every aspect. The food was exceptional, with the seared jumbo sea scallops being a standout highlight. The crème brûlée was also a delightful way to end the meal. The drinks were on point, and the atmosphere was very inviting. I left with a deep appreciation for the overall dining experience at Carlos Bistro.
Where do I begin.... This restaurant needs to close. In hindsight, we should 've known better not to order anything that had a higher likelihood of not turning over as this place appears to not have repeat customers. Appetizers: Beef tartar okay, oysters not fresh and tasted funky. One of us was sick all night. Nowhere was it listed where the raw oysters came from, a definite red flag for a restaurant that claims to be high end. An oversight on our part. Food The menu states and the owner claims USDA Prime, but the filet mignon was USDA Choice at best. The filet was not cooked to the requested temperature. The pasta tasted store bought. The four entrees were thrown together, no care in the presentation. The vegetables were not fresh. Owner Carlos was friendly, but obviously trying to do what he could to save his restaurant. He continued to try to up sell us on everything. And when I say continued, he was at our table constantly. Rudely interrupting eating and conversation. It was awkwardly uncomfortable. Kept bothering us to buy the wine that was 50% off, but obviously the prices were marked up on the menu. He kept asking us if we would buy dessert, even after declining multiple times and even after bringing out the bill. When we were leaving, there was a blatant sense of desperation that we come back . People expect a certain level of quality when they pay those kinds of prices. People aren 't going to continue to spend that kind of money for subpar, low quality food. I hate to see a small business fail, but Carlos Bistro misses the mark.
My mouth is still watering from this exquisite and delicious restaurant. We loved the lobster bisque, lamb chops, salad, and stroganoff. The dessert was so tasty! Carlos and his wife Stephanie were terrific hosts and we never had a dry soda/water. I would consider this my new favorite restaurant in Colorado Springs, CO! I tried to upload our pictures of our meals, and unfortunately they would not load.
