Ramen 101 - Vallejo

We ordered the Seafood Ramen, Tonkotsu Ramen, and Chicken Ramen, and all of them were delicious, featuring generous portions and fresh ingredients. The Geso Fry (squid legs) was particularly tasty and very satisfying. However, the Vegetable Tempura was a bit tougher than I anticipated—not bad, but I found myself chewing more than expected. Everything was well-packaged and stayed hot for a long time. I would definitely return, though I might choose a different dish instead of the tempura next time.

The vegetable tempura mostly consisted of onion rings, which was a bit disappointing this time. The chicken plate was flavorful, but unfortunately, there were no soy sauce packets! I will definitely order again, but I plan to try different items next time!

The tonkotsu ramen was disappointing and didn’t measure up to other establishments that truly excel in crafting authentic ramen. The karaage tasted more like Chinese popcorn chicken than the real deal and was overcooked instead of being perfectly flash-fried. I suspect that those who think this restaurant serves good ramen may only be familiar with instant noodles like Top Ramen or Cup Noodles, rather than the authentic dishes from outstanding places like Ryujin, Hiroshi, Himawari, Ramen Dojo, Santa Ramen, and more. Additionally, the spam musubi had an excessive amount of rice. I won’t be coming back to this restaurant.

The Black Garlic Ramen was truly delicious and prepared with impressive skill. The Chicken Katsu was equally outstanding, and the portion size was very generous.

The tonkotsu ramen fell short of my expectations and was quite disappointing. While the noodles were decent and the chashu was acceptable, the spicy version didn’t deliver as anticipated. I had high hopes for this restaurant since it came highly recommended, but I left feeling quite let down.
