The menu is displayed right at the entrance, enticing you to step inside and sample their offerings. We inquired about items that didn't contain eggs, and the staff was incredibly friendly, taking the time to check and confirm for us. Their handmade pies are truly exceptional—perfectly sweet, with the ideal pastry thickness and delightful, ripe fruits. It's also nice that the prices are clearly marked on each item, making it easy to choose. We even got a glimpse of the area where they bake all these delicious pastries and breads, which is conveniently located right inside the shop. If you find yourself in Trinidad, be sure to stop by Collie's!
Some of the best baked goods I've ever tasted! I highly recommend this place for breakfast, especially when the $5 box deals are available – they’re a fantastic bargain!
Wow! The first visit was around noon, and many of our favorite dishes were already sold out. We sampled a lemon treat while shopping, and it was delicious. I knew I had to go back the next morning. During my second visit, I tried a cinnamon roll, sticky rolls, and the best blueberry limoncello I've ever tasted. All three were fantastic! In a few days, I'll be passing through Trinidad and plan to make a special trip to stop by again. They have a huge selection of both savory and sweet baked goods. It's definitely my lucky spot!
Wow! These are the best sticky buns I've ever had! They are absolutely delicious, and this is coming from someone who wasn’t a fan of pecans. The cinnamon rolls are heavenly too. They even made my strawberry three-layer birthday cake, which was amazing! My husband is a big fan of their chocolate eclairs, while I'm partial to the cream puffs. We live 45 miles away, but we make the trip to Trinidad just to visit Colie’s. That really says a lot about how incredible their pastries are. If you're in the area, be sure to stop by—you won't regret it!
During a long road trip, we stopped at Colie's for a quick pick-me-up and were pleasantly surprised by our experience. The front serving area is quite spacious, which speaks to the size of the kitchen that clearly meets the baking and pastry demands for the Trinidad area. We tried their scones, cinnamon rolls, and coffee, and everything was fantastic. We would definitely stop by again!
