Creamy, yummy and lips tasty. I love the mariachi (think them creamy, little spicy, tasteful mac and cheese with vegetables like wobbles, garlic, mais, paprika) and always come for them. I love the airport seattle because of the beechers here- additional bonus is that they can also get ellenos yogurt here! the lines are much smaller than the place pikes!
Beecher’s is known for its handmade cheeses and food, originating from the famous Pike Place Market in Seattle. While I've never visited their flagship location, their shops in Pike Place Market and in the Flatiron District of New York City have seen great success. I didn’t expect the airport version to be as excellent as the original, but I was still disappointed after my visit to SeaTac. On the bright side, the customer service was outstanding. There was a bit of a line when I arrived, but it moved quickly, and the staff was friendly and efficient. In addition to hot dips, they offer a variety of homemade cheeses, salads, yogurt, and pre-made sandwiches. I opted for a classic grilled cheese and tomato soup. While it wasn’t the cheapest option (which is to be expected at an airport), I was willing to pay more for quality. Unfortunately, the grilled cheese was extremely flat, thin, and lacked flavor. I couldn’t identify the type of cheese used, but it was too mild compared to what I had hoped for. The bread was crispy, but they hardly put any cheese on it. After all, it’s a grilled cheese— the cheese should be the star of the dish, and it wasn’t. As for the tomato soup, it was a disappointment too. It was thick and bland, reminiscent of a bowl of diced tomatoes. I’m accustomed to creamy tomato soups, but this one was chunky and unremarkable. I don’t know—maybe I just didn’t order the right thing or perhaps it was an off day for them. Whatever the case, it left a bad taste in my mouth—literally. I might consider giving them another shot in the future, but it won’t be anytime soon.

BEST IN THE WEST!!!!!This lil Cheese shoppe is located in terminal C of Seattle airport. It has everything including a coffee bar, a dining area and a vending machine. They're most famous for their Mac Cheese and pretty much all things related to their handcrafted specialty cheeses.Quick grab and go options are up front whereas the majority of the refrigerated to go products are after the registers. So if you're there to do some shopping, I suggest entering where it merges with the coffee bar so you're not being rushed by the line of customers behind you. Don't forget to stock up on their lil buttery yummy in the tummy crackers.
