Republic Bakery - San Antonio

This bakery is the best. They bake with skill and love. There's always something new to try, so be sure to grab a few things to share!

Republic Bakery and Alebrije are located in the same building. The conchas were incredibly sweet and delicious! The cinnamon rolls were fantastic, and the Nutella roll was amazing. I appreciate that this bakery is located on the south side. The building itself has a lot of charm, and I was impressed to learn that it was built over 70 years ago. It adds to the overall experience of dining at this establishment.

The staff is very friendly, but I recommend asking about the freshness of the bread and coffee. The pastries look appealing, but they were dry and crumbly. The coffee seemed burnt. I visited in the afternoon, so maybe it would be better to go earlier in the day. Considering the price, I expected everything to be fresher. I might give it another try, but right now there are other bakeries on the south side that offer better value and fresher food. I give it 3 stars for convenience, but not 5 because freshness was lacking.

Baked goods were on point. Customer Service was outstanding. You won’t be disappointed. Loved the vibe and will be coming back. Thank you so much!
