Santopalato - Rom

SantoPalato is a gem in Rome for authentic pasta, with the carbonara and amatriciana being real standouts. Started with some tasty bruschetta, too. While the food nailed it, the service was a miss, unfortunately. Our waitress wasn't the friendliest, which was a bit of a letdown in the otherwise cozy vibe. Carbonara and Amatriciana are among the best in the whole city, not to mention the heart and the chicken pajata in omelette. Selection of wines nothing short of exceptional. Well done! Well done! A great find. Fantastic food and service. Certainly not your standard Italian fare. I especially recommend the smoked beef heart and the carbonara. So rich.
