Bistoro - Pueblo

This charming little restaurant is a gem! We stopped in Pueblo during our trip to Aspen, and it's just a short four-block walk from the downtown Marriott, making it super convenient. We ordered the tapas platter, which was bursting with delicious flavors. The vinho verde we paired with it was a lovely complement. The service was exceptional, and the Elena panini was simply delicious. I highly recommend this restaurant to anyone passing through Colorado!

We are in town for the state fair and happened upon this restaurant. The food was fantastic and the drinks were incredible. We ordered the tapas tray, the Elena panini, and the Ossum panini. We would definitely drive from Denver just to come here again. 10/10!

This place serves some of the best chicken in town! I always place a custom order—just chicken with sweet potato fries on the side. The owners are genuinely wonderful people, a refreshing change from those grumpy restaurant owners who get annoyed when you ask to modify your order. The cook and one of the owners even came out to give me a hug!

Awesome Experience! I mean the whole deal from the door to the desert. My new favorite place in Pueblo. Great people great food. Katrina was really patient with me and helped me pair a wine with my meal and made the whole experience a party. If you're in pueblo and you are looking for a warm, romantic, fun place to dine... start at Bistoro then maybe stay there ??

The Summer 2022 menu at Bistoro is incredible! The Steak is so good with the red pepper sauce and the new Basque cheesecake with that glassy caramelized top that cracks is so delicious. I love a Gimlet and this one is all the flavors of summer with rosemary, lime, cucumber!
