Verjus occupies a sunny triplex space in a 19th-century house overlooking the Palais-Royal, and it's run by New Orleans--born, Boston-bred chef Braden Perkins, and his partner in work and life, Saint Paul native Laura Adrian. They both had lived in Paris for two plus decades before opening this restaurant. You would never guess the restaurant is owned by Americans! We loved the many starters which reminded me of Korean banchon but not in any way by taste. The surprises all hail from the Verjus farms. The attached photos will speak for themselves. My favorite of the many was the baked potatoe swirl with caramelized onions and beautiful fresh creme' presented in the shape of what I remember as a butter cookie from my childhood in those round blue danish tins. We enjoyed a shared wine pairing. Photos attached. Since we did not look carefully at the prix fixe menu we enjoyed guessing at food pairings to follow after each wine was presented to us. This restaurant has the support of food critics in Paris but not as many locals who prefer very local chefs . It however does draw famous people like Beyonce.
Verjus has been spectacular both times my husband and I went! They were super accommodating for my allergies and being vegetarian (with advance notice). Each dish was a journey of interesting and unique flavors!

We had a reservation at Verjus on the recommendation of friends from back home in California. We made the reservation weeks before our vacation to Paris. Our hotel is 3 km from the restaurant, but traffic was heavy and the 30 minutes we allotted for the Uber ride lengthened and grew and extended into what was ultimately 90 minutes. We arrived about an hour after our reservation of 6:30. Yikes! This was due to crazy Paris Tuesday evening traffic, not the fault of the restaurant. The issue is that we were in constant electronic contact with the restaurant from the taxi and kept them aware of our delays. They kept warmly welcoming us to keep coming and reassured that they'd save the table for us. When we arrived they said not enough time remained for us to enjoy the full tasting menu. They understandably needed us out in time for the second seating for the evening. Well, Verjus, you could have told us sooner about the cutoff after which there won't be enough time for dinner. notifying us of the cutoff during our 90 minute car ride to your restaurant would have saved us the final half hour in the taxi. Not doing so was inconsiderate, frustrating, and preventable. Arriving to hear this news after a harrowing car ride during which we were in constant email contact is frustrating and unprofessional and poor judgement on their part. We decided that their suggestion for us to pay the full price for less than the full experience was insulting and we declined and dined elsewhere.
We had a good if a bit rushed meal. The wine pairings were just average. I would have rated it higher if not for the request of a tip on top of the service compris policy. If the place didn 't have as many Americans they wouldn 't be able to do that. It 's almost rude.
