I then inquired about the beans, which are vegetarian, and whether they had salsa (which they do, although it's in a package, not fresh). I also meant to ask about the gravy since it's usually made with chicken drippings, but I forgot to do so. Thanks to the waitress's help, I decided to order the huevos rancheros without the green chili. It was decent overall, but the hash browns were a bit thicker than I would have preferred, and the salsa from the package wasn't great. My husband ordered a "land breakfast," which included eggs with cheddar (they should specify the type of cheese—they could also use American cheese), bacon, hash browns, and French toast. Unfortunately, his French toast was burnt on the outside but fine on the inside. He didn't mention it at the time and ended up feeling disappointed. We also ordered beignets and a "cini mini." The cini mini was a delightful small cinnamon roll with icing on top. The beignets, however, were not authentic; they were quite dense and more like biscuits rather than the light and fluffy French style they should have been. Overall, this place was decent and worth a visit, but it was surprisingly quiet with no music, which I found odd. A few small improvements could make a big difference here, such as offering natural maple syrup, fresh salsa, and steering clear of single-use plastics like straws and Styrofoam. We should all do our part to help save Colorado and the planet—after all, we only have one!
I love eating out! I had the fried steak with green chili Pueblo benedict, and it was delicious. The hash was crispy, and the staff was great and friendly.
The food is excellent, and the service is great. The atmosphere is definitely different since everything around it is for sale.

I ordered the Texas breakfast and everything was cooked perfectly. I think the gravy could use a little boost of flavor, but it was fine. Service was fast and friendly. The restaurant is small and they have a lot of items inside on display that are for sale. Kind of like a garage sale. The coffee was just ok. They also have a nice lunch menu.
