Your frit is intended to make corn chips, and the corn chips are what they use to thicken the beans. Note to the pancakes... they are made with oat blossom. Of course oats are gluten-free, but often they are contaminated with gluten as they are processed in the same facilities or grown near wheat. That's why you usually have to buy gluten-free oats, not regular oats I didn't eat the pancakes because I don't know if the oat blossom is used gluten-free. If not, the gluten content is probably very low, but it is not worth risking. Most oat milk in Mexico is also not gluten-free. But they can be good, but PLENTY of other delicious options on the menu. Most of the menu is gluten-free because they use corn. I was ecstatic that they had gluten-free pancakes. The owner even made it with almond milk, so I could also be milk-free. Great place, food and people!! A must for my fellow citizens

Naturally oats are of course gluten free but many times they are contaminated with gluten as they are processed in the same facilities or grown in proximity to wheat. That’s why you typically have to buy gluten free oats, not regular oats I did not eat the pancakes because I don’t know if the oat flower used is gluten free. If it is not, the gluten content is probably very low, but not worth it to me to risk. Most oat milk in Mexico is not gluten free either. But they may be okay But PLENTY of other tasty options on the menu. Highly recommend. Great place
