The grounds were gorgeous and staff and especially the GM, Dermot Connolly, attended to everything. Such a great group of people. I digress, dinner one night was at Sting Rays. Oh my, I think of the Scallops with Lobster Risotto TO. THIS. DAY! I am pretty sure I only ate two of the scallops (they were delicious), however, the Lobster Risotto still fills my head. Seriously. I get on a kick to try to find a good recipe on the internet or something similar. So sad to see this restaurant close.
This was, by far, the BEST dining experience we had at the resort. I still have dreams about the sea bass over risotto. It was literally heaven in my mouth. My partner laughed at me several times, as I never tend to finish my meals and usually cede him the remaining once I'm full but this dish, I almost took his hand off with my fork when he tried to poach some. Also, a fantastic wine list and a beautiful view of the marina/bay. We sat outside and the whole experience was picture perfect. If you're staying at the resort, DO NOT skip this place.
I ate here last night and had a fantastic dinner. The decor was lovely and the service was attentive, but let 's get to the food: The soup of the day was cream of calabaza (like butternut squash with ginger cream. I want more. Yes, now. This was followed by two perfectly seared pieces of tuna crusted with sesame seeds and Sichuanese peppercorns--not enough to make my mouth tingle, but delicious nonetheless. It was served on a bed of red lentils. Way tasty. I washed it all down with the local version of sangria, which--in addition to the usual ingredients--contained a fair bit of rum. : We went a little overboard on desserts: chocolate souffles with Chambord cream (they take a little time to prepare, so order it when your entree arrives, or enjoy a glass of port while you wait , apple crumble, and creme brûlée (that last word is brulee in case Yelp still butchers diacritical marks . The first two were great, and I was too full to try the third, but those who did gave it a unanimous thumbs up. Note that if you 're not staying at the El Conquistador Resort, this place can be challenging to find (it 's across from the marina, at the bottom of the resort 's funicular , but worth the trek.
Dine outside for a nice ocean breeze while you eat. The meal was good with local fish and a lot of different seafood options, not quite sure if the meal justified the high prices on the menu though I have to say that the star of the meal was the dinner rolls. I know that sounds silly but these small warm rolls were delicious. My table kept asking for more and more. I gave it 3 stars because I think it says something when the dinner rolls are the best part of the meal.
Turn right around and get yourself a quesadilla from the ballyhoo bar! You will save hundreds and have a better meal. I will say none of us ordered seafood (long story) but if you can't cook steak or chicken well maybe just don't cook it? My steak was overlooked and did not look or feel like filet which is what we paid for. The taste was fine the truffle mashed potatoes tasted like Idaho boxed potatoes, but I was starving. The only thing that was actually bad was my boyfriends stuffed chicken. The chicken breast was hard when you would chew it and the inside cheese was melted (at some point in time) but was now dry. Flavor was poor as well. They did comp that item but I wasn't interested in anything else after that. We were also the only table and it took well over an hour to get our food. As usual, go off site for the good stuff! Cheaper and a meal to enjoy!
