At Chuy's, my vegan trick is to order the chalupa and enchilada plate with some modifications: I ask them to remove the cheese and chicken from the chalupa and replace it with avocado slices, and to substitute the chicken enchilada with a veggie enchilada with ranchero sauce and no cheese. One of the food runners even commented as he brought the plates to me, saying, "I don't know what this is but it looks delicious!" ... And he was right, it definitely is!
I absolutely adore this restaurant because the food is incredibly delicious and always fresh. It's rare to find Mexican restaurants that offer vegan options, so this place is a gem!
I ordered the vegetarian enchiladas without cheese, served with cilantro lime rice and refried beans. The sides were delicious, but unfortunately, the enchiladas were lacking in flavor. The filling tasted simply like steamed vegetables with minimal seasoning. I visited shortly after the storm Harvey, so I wonder if the rush of customers affected the quality of the dish. There was definitely something missing - it was quite bland. A tip for vegans: be sure to ask the server to skip the white or ranch sauce that comes with the chips.

Mexican restaurants are not always the vegan friendly, but a few queeks brings me in the rule there! at chuy’s my vegan hack is to order the chalupa and enchilada plate with the following modifications: remove the cheese and huh from the chalupa and let them replace with avo slices replace the chicken enchilada with the veggie enchilada with the ranchero sauce and not a cheese that I had one of the foods that I had to say...
