Located in the basement of the Premier Mill Hotel in Katanning, if you weren't a hotel guest you'd probably not even know that it exists. The only access is via a staircase from the hotel lobby no disabled access). It is quite an intimate space, and can feel a little dark and oppressive. The fact that they have embraced the building's history and incorporated some of the original machinery means that it has a unique charm/atmosphere that you wouldn't find anywhere else. There were a couple of significant let downs, firstly the knowledge of the bar staff. I started by ordering one of their signature mixed drinks, a Dark Stormy $15). The lime juice completely overwhelmed the rum and ginger ale I have no idea how she managed to ruin such a simple drink and my wife's mocktail was so sickeningly sweet that it was virtually undrinkable. If you try I would definitely stick to the wines, some of which they have on tap and most of which are from local wineries. Unfortunately there are no beers are on tap, which means it is just a bottle shop. They did advise that they are looking at installing beer taps some time in the future. The second is the food, we were looking forward to trying some of their tapas meals, only to find that it was just a small selection of dishes from the Dome Café menu. Having tried the Temperance Bar at their sister hotel, Farmers Rest Hotel in Northam it was a real disappointment. The quality of the food was what you'd expect from a café not an upmarket wine bar. They really need to lift their game improve their food and drink options.

We had a great night here! Kasa the bartender welcomed us when we arrived and explained a few of the historical things in the bar. We didn't rate the salt and pepper squid but the burgers and chips were very good, the atmosphere was excellent and Kasa was an exceptional bartender/host Very good vibe, would recommend to everyone!
