はま寿司のいいところは客にどんな醤油を使わせるかという判断を任せてるところだと思います。 一流の寿司屋でもこのネタにはこの醤油、といところは少なくて全部のネタで同じ醤油 しかも薄味… を使わせるところも多いです。 流石に玉子とかウナギは煮詰め使ってるかもしれませんが…。 本当にこだわってる寿司屋ならそこで思考停止せずにこのネタにあう醤油 醤油じゃなくてもアリ ていうのは提案すべきだと思います。 素材を味わう、 しかも同じ醤油つけて というのは本当に思考停止ですね。 その点、奇しくも客に調味料を委ねているのは正解だと思います！ でもやはりネタ 素材 は重要ですが…汗
