I typically love birria tacos, but I have to say tonight’s were quite the disappointment. They were almost fried to the point of being burnt, so that’s all I could really taste. Burned, overcooked shells. I don’t know if this was just a one off and they were having a busy night or what but I’ve had so much better elsewhere.
I have never had a bad experience at Taco Libre! So happy one opened up near me. I would recommend the quesabirria tacos some of the best I’ve tasted in the area!
A friend texted me on his first visit to Taco Libre's new Eagan location and asked what he should order. I've been going to the WSTP location for years, so I consider myself an expert. I told him the Quesabirria Tacos. About a half hour later, he texted me and asked why there weren't 500 people waiting in line to get this food and declared the tacos life changing He then admitted that the consommé that accompanies the tacos was so good he drank the leftover juice.I don't blame him. Personally? I use a spoon and treat it like the precious broth that it is.Good people of Eagan. I realize that little strip mall anchored by Panera on one end and Panda Express on the other doesn't seem like there's room for exquisite Mexican food, but believe me when I tell you Taco Libre is just that.The street tacos are crafted with fresh corn tortillas, doubled up for sturdiness and flavor, the fillings are fresh and speckled with cilantro and minced onion. The Al Pastor has fresh pieces of pineapple and hunks of roasted onion on the side. The Tinga de Pollo has a nice little kick that isn't too off-putting for the delicate Minnesota palate. Pick a meat, they're all good, Asada, Carnitas, Barbacoa...delicious. Vegetarian options, too.You pick the vehicle for the meat, street tacos, bowl, a massive 18 inch machete, quesadilla or huarache. Try something new and different, lengua or tripa (cow's tongue or stomach lining). The guacamole is great and the chips are some of the best in the Cities.I can't speak to the tres leches, but the churros are served warm and while I shouldn't eat an entire portion myself...they're irresistible. The West St. Paul location had a cucumber chia lemonade prior to the Covid shutdowns that was so refreshing. I hope it makes a comeback after we get through this wretched pandemic. And honestly? It takes GUTS to open a restaurant in the middle of this nightmare for so many reasons. Surprisingly, staffing doesn't appear to be a problem at Taco Libre. It's one of the few restaurants I've been to in the last six months that isn't struggling with service or quality of food.My prediction is that once word gets out that Taco Libre is as good as their fans know it is, that line for their food will be out the door. I'm just thrilled to know that amazing tacos are finally only a couple miles away from home.
