It seemed like the restaurant was mainly focused on their breakfast menu, which wasn't very vegetarian-friendly with options like pancakes, eggs, and bacon. Despite this, the Korean menu felt like an added bonus and tasted great. I've been working in Castle Rock for five years and it's been difficult to find vegan food without going to a large chain, so this visit was a pleasant surprise. I appreciated that I could order any meal item vegan by requesting mushrooms (except for the egg on the bibimbap), and it was nice to see they had vegan milk options. The restaurant had great mountain views and cozy nooks to relax in. They also offered gluten-free cookies and muffins, although they were not vegan-friendly.
