Growing up near Aix-en-Provence, France long time restauranteur Gilles Brassant decided to pursue his dream of Cassis Bistro when moving to Calgary in 2008. With his 2 highly successful restaurant projects in San Francisco as inspiration, he paired up with Brittany, France born Chef Dominique Moussu to create the stunning award winning masterpiece Cassis Bistro. Chef Moussu (trained Brevet d’Etudes Professionnelle, Le Chateau de Loc Guenole, Savoy) delivers a farm to table, locally sourced and very seasonal menu with lovely authentic French flair. Together Gilles and Chef Dom are an unstoppable culinary force- with level of service and gorgeous presentation! Also, you are acquainted with some of the finest French wines to pair with Chef Moussu’s artful and approachable menu making this a “Must Visit”! When Concierge in Calgary this was ALWAYS a premiere experience for critic, foodie and VIP alike… and still is! After visiting France, New York City, San Francisco, Montreal, Quebec City and Vancouver Cassis Bistro remains one of my favourite All-Time!
