Best Japanese restaurant in Bilbao when it opened a few years ago. We used to be regular clients. Quality of service is not what used to be. Some dishes need a new twist. Quality and presentation of dishes is good but not top notch as years ago. I would like to see other dishes from the Japanese cuisine being offered including some hot plates. I will summarize my disappointment, after a few years as a regular customer. 1-They offer, without asking, as a supplement to the tasting menu 2 options: an oyster, (saying that there were no more) or wayu. We did not ask for it, nor did we understand it. 2-When asking for explanations of the agreed menu, they told us There are not many dishes, you will finish the menu in 45 minutes, you will not be filled . Our idea was to enjoy it. 3-The next table was closer than my partner. 4-Food: just a carousel of sashimi and nigiris, in pairs, and a tartare. Sparse and monotonous in every way. Good product, really. Presentation good. 5-Deficient table service, not in accordance with the price/type of restaurant. 6-The cutlery was not changed throughout the dinner. (there was no linebacker either). Very basic crockery (years ago it was very cool) 6-Desserts: Do you want some dessert? We had doubts if it was included. There was only one scoop of ice cream and 4 truffle sticks left, that 's for the two of us. They told us that there was no more, that to taste a good homemade dessert, you have to come before, they fly (I repeat, it was a closed menu). 7-They cleaned with flis-flis and placed the tables, while we were still having dinner. 8-Accelerated service, without finishing one, they brought another.
