Guadalajara Mexican - Bastrop

Guadalajara never fails to impress. This is our Nth visit, and we can always rely on having a wonderful experience here. The chips are crispy and fresh, and the salsa is delicious—not overly oniony or spicy. I could eat it by the spoonful! The fajitas, accompanied by warm tortillas, are top-notch. The grilled tilapia is light, healthy, and satisfying, paired perfectly with freshly grilled vegetables. Parking is easy, and they offer a kids' menu along with crayons for the little ones. The service is quick and attentive, even on a Saturday night. The prices here are among the most reasonable at Tex-Mex restaurants since COVID, yet the quality of the service and food remains exceptionally high.

This used to be one of my favorite spots, but with so many Tex-Mex options available now, I would recommend trying a different place. The queso was very thick, even after I mixed in some salsa. I wasn’t impressed with the quesadilla either, and I was disappointed with the price of my drink. I ordered a large, but it ended up being mostly ice. On the positive side, our server was attentive, and the atmosphere felt like a typical Mexican restaurant.

The Stackable Enchiladas and Enchilada Gaudalarja were absolutely delicious! They were generously covered in sauce, although mine was a bit salty for my taste (I'm not a big fan of salt unless it's part of a specific recipe). Despite the heavy sauce and the slight saltiness, I really enjoyed the meal. The margaritas were fantastic as well—superb, in fact! The bartenders were not only knowledgeable but also very friendly. We chose to sit at the bar, which made for a great experience.

My wife ordered the Tex-Mex enchiladas with double rice. The meat had a fantastic flavor that made every bite enjoyable. My granddaughter chose the appetizer quesadilla, which was enormous. She claimed it was one of the best she's ever had and was surprised that she managed to finish it all. I opted for the Guadalajara stack accompanied by an amazing cream sauce and some really tasty beans. Typically, rice at most places is just average, but this rice was different—full of flavor, light, and fluffy. My granddaughter even ended up eating half of mine! Overall, it was a delightful dining experience.

The waitress was incredibly kind and attentive! I had a hard time making up my mind, and she chose both the soup and drink for me. They were both delicious, and I left no crumbs behind! I really appreciate their unique take on traditional Mexican cuisine. They did an excellent job!
