Republic of Cavite Restaurant - Aliang

We did some business at the Provincial Capitol and chanced upon this restaurant with the ad "home of pancit estacion". The pancit was like pancit malabon with a fist sized topping of mongo sprouts, 2 thin slices of boiled egg, one piece of shrimp, 5 small pieces of pork fat and 4 pieces of chicharon bulaklak. The mongo sprouts was not even cleaned ( you can see the green skin of the mongo seeds on top of your food ) . The grilled chicken sandwich was yucky. All the while I'm expecting that it was chicken spread sandwich that is grilled. But in reality it is lechon manok slices placed in between 2 slices of bread swimming in thousand island dressing then another slice of bread with 2 slices of cucumber and a piece of lettuce again swimming in thousand island dressing. As you bite into the bread you can see the dressing dripping. Yuck. First and last. Never again.

Foods were great. Their version of kare-kare was the best that I tasted thus far. I loved their beef kaldereta, too. The restaurant was like an old Filipino house which for me is more appealing as they cater to Filipino food.

We arrived before lunch time to a rather empty restaurant but come lunch time, the air conditioned area and the al fresco dining side were filled with customers.Wait staff are courteous, neat-looking in their uniform and are attentive. Waiting time for the food to be served is rather long considering we were the only customers at the time we ordered, but it was worth the wait. Their crispy pata is the best I've had to-date, crispy fried yet the meat is tender and tasty. The chicken Java rice is fantastic likewise.I do recommend that you give this place a try. I hope they can add chicharong bulaklak in their menu.

I stopped there in May and enjoyed and excellent meal in air conditioned comfort. The service was good and the desert was wonderful.

We ordered Lengua, Paella Negra, Siomai, and Callos. Our favorite dishes were the Siomai and Lengua. The Paella Negra was okay, but it could have used more creamy ink. Unfortunately, the Callos was not good, tasting like pork and beans.
