Le 80 Jours - Uzès

I would have liked to put 4 or 5 stars but there is one but. Everything went well. A dish, the risotto not cooked enough. We order, we use the inputs, then the dishes arrive. It is noted that the risotto that accompanies the cod lacks kitchen. What we are told that the chef always cooks it this way and that we are the first to make this remark. First of all, I think we shouldn't have prescribed it to order. A creamy risotto must be firm but there I even tasted it and it was crunchy. No luck for those who receive us, we are restaurateurs and we know what we're talking about. And as a restaurateur I would have removed the plate and rectified with another accompaniment, for example the celery purée that was very good, at least I would have proposed to change with something else while keeping the cod. Besides, I didn't say anything about the fish barge, but the lard wasn't grilled enough. It's a shame, but when everything is imperfect, we quickly notice the mistakes, and with a simple change that doesn't cost much that we would have been delighted. Otherwise the tatin deserves to be served hot and not cold. Thanks anyway. The bise.
