Platonic ideal of a sourdough pizza. Crust like the chewy interior of a San Francisco loaf. Perfectly wood fired with lots of air pockets. Got the Bufalina because it was the only one with bufalo mozzarella and it was a heavenly (puffy cloud) take on the classic margherita. It was just a take out joint the Easter Sunday I went, not the full restaurant pictured on Google. Try it, it’s genuinely impressive—and unexpected in this random residential street—especially after experiencing some truly nasty pizza downtown. The people running this place take a lot of care with their ingredients and process, and it shows. They were very nice and worked with me in my imperfect Italian, and added in their own English phrases to ensure everything went smoothly.
