Verdant Kanto Mami - Incheon

On a regular day, my sister and I visited a neighborhood salon and noticed a colorful umbrella at one of the few parking spots outside. The moment I laid eyes on the owner, I knew I wanted to try his mami despite not yet knowing how it tasted. The sight of tricycle drivers eagerly waiting for a bowl indicated that it must be delicious. Watching him craft the simple street-side mami with such grace and fluidity, dipping noodles into broth, adding toppings, and serving it with care, was a memorable experience. The mami itself was simple, honest, and flavorful. It was his dedication to his craft and hard work to make a living while serving good food that made him and his mami stand out. Even though I don't know his name or story, his perseverance and commitment are inspiring. This unforgettable experience is definitely worth returning for, reminding us all to be as dedicated and hardworking as he is.
